Polling the group to see if anyone has successfully found a way to use a local install of Centricity (CPS) with Firefox or Chrome set as their default browser.
For Chrome, we use the IE Tab add-on, we add the CPS link URL to the always open in IE Tab.

The problem lies in that the website doesn't function with the other browsers. When a website is prompted the computer launches your default browser. If you train your uses to not set the other browsers as default, you can have both Chrome and IE on the machine and it will work fine.
If your users can't remember this you can circumvent the default browser for this website by swapping out the shortcut on their desktop. Below are steps to create a shortcut that launches Internet Explorer with your CPS address.
Rightclick on desktop-> New -> Shortcut
Paste this into the field labeled “Type the location of the item:”
"C:\Program Files (x86)\Internet Explorer\iexplore.exe" http://CPSServerAddress:9080/centricityps/cps/
You will need to change the url to your CPS address. The easiest way to get this is to right click you current CPS icon and go to properties.
Some of the final touches you can do, but not required. Label the icon as “CPS 12 Client” and change the picture of the icon to the CPS icon. (rightclick -> Properties -> Change Icon -> Path to “C:\Program Files (x86)\Centricity Practice Solution\Client\Trinity.ico”
I would also recommend putting this in the start bar and deleting the all the Stock shortcuts.
Note: You will have to delete the stock shortcuts every time you reinstall the application on the machine.

I have heard bad things about the IE tab, so I haven't tried this. But this is a much more elegant solution.

We actually go the caswell route...
Caswell's solution works great. I have been doing that for over a year now after unsuccessfully finding a script to run during a login making IE the default.
I also have IE open to our intranet page where I have a link to open CPS. That works even if the user deletes their CPS shortcut and if I am doing an install on a new machine.
